WHAT IS KOMBUCHA AND IS IT SAFE?

Kombucha is fermented tea. In its simplest form, it’s a blend of tea, water, sugar and a SCOBY (symbiotic culture of bacteria and yeast). These ingredients are left to ferment in a warm environment for a period of time leaving you with a delicious, refreshing and nutrient dense soft drink. Low in sugar, kombucha naturally contains acetic acid and antioxidant polyphenols. Our booch is natural and unpasturised so very young children (under 5years) pregnant/lactating mothers and those with sensitive stomachs may want to consult their doctors before popping open a bottle of our delicious brew.

WHERE IS KOMBUCHA FROM?

My Kombucha is a modern take on an ancient tea based elixir that leaves you feeling relaxed & energized without compromising on health. According to legend, kombucha was first brewed around 220 BC in China during the Qin Dynasty and later moved across Asia to parts of Russia and Eastern Europe where it was common as a home brewed soft drink and health tonic until the late 1980’s. In recent years it’s become a staple beverage in the Western wellness world where it is now brewed as a complex soft drink / alcohol alternative, and also as an innovative cocktail mixer.

WHY KOMBUCHA AND WHY DAD'S HACK?

I discovered this great drink during the first lockdown while trying to limit my booze intake, up my gut health and spend more time with my kids. I got a SCOBY from a friend and started brewing at home in small glass jars. My relationship with the live culture quickly became a passion and spiritual journey of discovery. I have since scaled up operations/brewing here in Bangalore and have necessary FSSAI and certified lab testing in place. Everything I have done until now to create this product and brand are the result of a series of little hacks. As in life, so in my booch!

HEY, IS KOMBUCHA REALLY HEALTHY?

Well, studies show that there are various aspects to Kombucha that make it so;​
1. Contains polyphenols & antioxidants from the tea
2. Completely vegan & natural
3. Low in Sugar (3%) & Caffeine which is consumed by theyeast
4. Contains beneficial acids like acetic, gluconic, glucuronic, etc
5. Contains probiotics & vitamins
6. Free from preservative & additives
7. Great for the gut & mind
8. Helps digestion & detoxes the liver

WHAT GIVES KOMBUCHA IT'S DISTINCTIVE SWEET/SOUR FLAVOUR?

Acetic acid is what gives kombucha it's vinegary flavour. It's the most abundant of the three most common 'organic acids' found in kombucha. The other two are glucuronic acid and gluconic acid. They're all produced as a by-product of the fermentation process used to make kombucha and are super healthy for you.

DOES KOMBUCHA HAVE VITAMINS & MINERALS?

Kombucha contains small amounts of vitamins and minerals which are produced when the yeast breaks down the sugars, including vitamin C and B vitamins B1, B6 and B12. These are absorbed by the gut when you drink our booch.

WHAT IS THE SHELF LIFE OF YOUR KOMBUCHA?

Our Kombucha is perfectly balanced and aged by the time it gets to you and is best drunk fresh. Once placed in the refrigerator between 2-4C we recommend you consume it within 120 days from mfg date mentioned on the label. If you forget about a bottle in the fridge, don't worry - it doesn't spoil but keeps fermenting really slowly and becomes a little more sour (think kombucha vinegar). This can be diluted and consumed as shots, drinks or salad dressings chock full of B-Vitamins, polyphenols and beneficial acids. Waste not, want not!

ARE YOU A SUSTAINABLE BRAND?

We like to think so. Our brewery is blessed to be a part of an organic farm. Our RO waste water goes into irrigating the crops, the extra scoby and used tea leaves are composted for fertiliser. We collect used bottles for sterilisation and sanitise them to be reused, no easy task! If you would like to be cool and make a difference you could send us back the used bottles, help us keep costs down and do your bit for the environment! Now, we have also added aluminum cans to our portfolio as they are very sustainable and allows us to reach you across India without having to worry about broken glass.

THE BOTTOM LINE..

Kombucha is touted to help treat all sorts of chronic health problems like cancer, diabetes, heart disease and even have anti-microbial properties. There is ample evidence for the benefits of tea and probiotics, both of which are found in kombucha. However, since evidence for its direct health benefits are limited, just drink our booch because we make it with love and it tastes damn good! If you decide to try homemade kombucha, make sure it’s properly prepared. Contaminated kombucha may cause more harm than good.
